Gadus macrocephalus or Gadus morhua
The term cod is used to identify salted and cured cod (Gadus macrocephalus or Gadus morhua). G. macrocephalus is fished in the North Pacific Ocean while G. morhua in the North Atlantic Ocean.
Aloia Foods’ cod is processed from both frozen on board cod and fresh cod, the fishery is mainly hook-and-line. Producers with whom we have business relationships are located in: Denmark, Faroe Islands, Norway and Iceland.

Gadus morhua is characterized by tender meat and a delicate taste.
Sizes are 200/400g, 400/700g, 700/1000g and 1000/1500g, 1500/2000g and 2000g/UP.

The fish is opened “butterfly” to be then salted and cured.
Sizes are 0.5/0.8kg, 0.8/1.2kg, 1.2/1.7kg, 1.7/2.7kg, 2.7/4kg and 4kg/UP.

The sizes are 31/40, 21/30, 16/20, 13/15, 10/12, 7/9 and 4/6. It is intended to be the numbers of fish per carton (from 25 kg).
The fish is opened “butterfly” and then salted, cured and dried. This type of Cod is produced almost exclusively in Norway. Dry Cod can be “White Wings” or “Black Wings” depending on whether or not the black membrane that surrounds the stomach is removed.
